Sourcing Story:

We are excited to once again partner with our friends at Delagua to bring you a special coffee that tastes like spiced rum and fruit! El Reflejo was sourced through Delagua’s Neighbors & Crops program, an initiative through which Delagua helps surrounding smaller farmers by buying their coffee at a higher price, processing, and exporting it.

El Reflejo is owned and operated by Miller Hernandez, who formally started his coffee career as a coffee picker, saved up enough money, and bought his own plot of land to plant his own coffee. On his farm, he grows Castillo, Colombia, and Caturra varietals. This particular lot is a naturally processed Castillo with a 20-hour oxygen-free fermentation phase, followed by a 24 day dying period. The extended fermentation phase helps create more consistency the coffee, and the oxygen-free environment plays a hand in controlling what microorganisms participate in the fermentation process, thereby affecting the flavor profile of the coffee. Overall, the fermentation phase is what creates those bit, jammy, boozy, spiced rum notes that we loved in this coffee.

Brewing notes:

There is almost no wrong way to brew a coffee, but when we tasted El Reflejo, the vibrancy and richness of the fruit notes reminded us of summer, and what better way to enjoy coffee in the summer than making an iced pourover? We find that a Hario V60 accents the acidity and nuances of the coffee more, and a Kalita Wave creates more sweetness and body. Here is the recipe we use in our shop:

Dose: 21g coffee, 250g water, 100g ice
Grind: Medium
Water temperature: 206 F

Bloom with 50g of water over ice for 30 seconds.
At 30 seconds, slow pour to 250g.
Total brew time should be ~02:15
Swirl carafe, enjoy! Add more ice, if desired.

Orders placed on a Friday and over the weekend will be roasted on Monday and available for pickup on Tuesday. You will receive an email confirmation when your order is ready to be picked up or has shipped.
