Sonnet is our summer filter blend that derives its name from Shakespeare’s Sonnet 18.

The notes of strawberries, birthday cake, light florals and chocolate in this coffee make us ask along with the poet: “Shall I compare thee to a summer’s day?”

Sonnet can be enjoyed hot or iced and brewed either on a coffee machine or manually as a pourover.

Roaster’s notes:
Formulating this blend was a fun challenge. We set out to create a floral, fruity, yet approachable coffee for the warmer months that can be enjoyed by casual coffee drinkers and enthusiasts alike. We knew we wanted to use a dash of an experimentally processed coffee with intense fruity and floral notes but make it accessible to those who prefer more traditional-tasting coffee. Generally, we blend coffee when it’s green and roast the components together, as opposed to roasting each component separately and blending them after roasting. However, when we followed our usual philosophy and roasted the components together, we found that we could not at all taste the top notes of the experimental coffee - which was the whole point of the blend. After thinking things through, we realized that the temperatures at which we roasted the coffee were perfect for two of the components but too high for the delicate experimental coffee. Our solution? Roast two of the blend components together and roast the third one separately to a profile that best brings out its unique character, then blend it in after roasting. And voila! The coffee shone through and the blend began to sing.
